Syrup:
2 cups frozen berries
1/3 cup water
3 tbsp. maple syrup
1/2 tsp. cinnamon
1/2 tsp. vanilla extract
French Toast:
loaf challah, sliced and left out to dry
1 1⁄2 cups whole milk or 1 1⁄2 cups half and half
6 large eggs
1 pinch salt, to taste
1 tbsp honey
Dash of nutmeg
1⁄2 tsp vanilla
butter (for frying)
A dash of Amaretto (it adds a great level of flavor if you drink liquor)
Directions:
For the Syrup: Step 1
Place the above ingredients in a small saucepan and bring to a boil. Use a wooden spoon and smash any large berries up a bit.
Step 2
After the mixture has come to a boil, reduce heat to medium-low and let simmer for 10 minutes until it reduces and is thick enough to cover the back of a spoon.
Step 3
Enjoy warm or cold.
For French Toast:
Step 1
In a shallow dish large enough to hold three slices of challah side by side, whisk eggs and milk.
Step 2
Add amaretto, honey, vanilla and salt
Step 3
Place three slices of the bread in the egg mixture and let soak about three minutes each side.
Step 4
Meanwhile melt one tbsp of butter in a large frying pan.
Step 5
Transfer challah to pan and cook 3 minutes on each side or until nicely browned.
Step 6
Top with Triple Berry Syrup, whip cream and fresh berries
